Ideas for good vegetarian/vegan food...  my best suggestion is to buy a vegetarian/vegan cookbook, one of those quick meal ones or if you are wanting to cook buy one of the ones with recipes calling for more of your time.  You can play off a lot of the recipes in those books and create a lot of your own.  Amy's brand products of which you can find many of at
Krogers has all vegetarian/vegan products.  I don't recommend going to Meijers as they have a very small natural food section with few options.  Also Italian food is easy to make and meat can easily be replaced with bell peppers, squash, zucchini, portobello mushrooms, carrots, and a wide range of other veggies or you could also buy a meat substitute for any dish if you want.  Although if you don't plan on staying a vegetarian i recommend just using veggies.  So spaghetti, lasagna, and pasta bakes are very easily made vegetarian/vegan.  Mexican foods are another easy one.  Use fat free or vegetarian beans and substitute veggies or a veggie meat product for almost any mexican dish.  And things such as tostadas, fajitas, bean burritos are easily made without any meat products.  An easy to make dip that is excellent is to take half a can of refried beans (fat free or vegetarian), add about a 1/3 of a jar of salsa or more if you like and depending on your tastes add a little hot sauce and stir it up well.  If you're already making some mexi-food steal some veggies from other dishes, chop em up well and add em to the dip.  Eat it with chips, get some vegan taquitos (Kroger) and eat it with them or just try different things with it.  It will keep very well in the fridge and is easy, quick and very cheap so if you are having company you can make a lot without sacrificing too much beer money.  Also most French Toast Sticks that you find in the frozen food section are vegan.  Aunt Jemima Dunkers french toast sticks are vegan and pretty cheap.  A box of sixteen is like two dollars and change.  Sandwiches are another easy one.  Buy some extra firm tofu and some veggies.  Cut a 1/4 inch slice of tofu and fry it up til both sides are cooked well and turned golden brown.  Remove it from the heat and coat it in some teriyaki sauce or whatever sauce you want to try and fry it for another 15 odd seconds on each side.  Fix your bread up with whatever toppings you usually would and add the tofu.  Enjoy.  Ramen noodles are easy also.  Buy a bag of oriental style ramen noodles and a bag of Mike Sells Good and Hot potato chips.  Take the flavor packet out of the ramen noodles and crush the ramen noodle up real good.  Try not to destroy the ramen noodle bag as you will need it yet.  Add the flavor packet and noodles to a bowl and fill with enough water to cover the noodles.  Microwave the noodles for a few minutes until the are done but NOT mushy.  I don't know how well your microwave works so I can't tell you for how long.  You mave have to stir them once.  While the are cooking fill the ramen noodle bag with potato chips and crush them up in the bag.  I use enough chips to fill the bag halfway but you want want more/less than I use.  Set the chips aside and drain your ramen noodles of all broth.  Mix the noodles and chips together in a bowl and you have yourself a quick and cheap snack.  I like to fix myself some rice and mix it up with hot sauce and add that to my noodles along with the chips but I am a bit wierd.  I suppose that is enough for today...
